Working in a domestic kitchen will require you to be resourceful, discrete, efficient and flexible. You’ll need to be able to menu plan for specific locations, styles and situations, making the most of seasonal, local ingredients. There may be special dietary requirements to take into account and you’ll need knowledge of cooking on specific types of equipment – for example, an Aga. You will have experience in a busy, high quality dining hotel, restaurant or private service kitchen; extensive knowledge of fine dining and related food preparation, presentation and service. You will be educated to secondary level, and have certified evidence of a full-time diploma course or City & Guilds Level 2 NVQ in Professional Cookery. You are fluent in written and spoken English with good interpersonal skills. You will have excellent social skills to deal with people at the highest level, the experience to manage a small kitchen brigade, remaining calm during busy periods. Standards of personal dress, hygiene, manners and moral conduct are of the utmost importance.
