You’ll need to be able to menu plan for specific locations, styles and situations, making the most of seasonal, local ingredients. There may be special dietary requirements to take into account and you’ll need knowledge of cooking on specific types of equipment – for example, an Aga. ​Client with a private home in the South of France is looking for a chef from 30th July until end of August. The house has a well-equipped kitchen and has a British housekeeping couple who live on site who will help to lay tables, set out breakfast, assist with shopping, kitchen chores and washing-up. The work is flexible but will generally involve some breakfast prep and planning, though cooked breakfasts are only required on rare occasions; a delicious two course lunch plus cheese and a more sophisticated dinner. The style is elegant and rustic Mediterranean with a focus on light and fresh. High quality ingredients can be sourced locally. There will typically be 12 to 24 guests. Chef will have 1.5 days off per week and will be provided with board and accommodation. Salary will depend on experience. May suit a couple who wish to job-share.

You will need to be a driver and some French is helpful for shopping.

Chef is required to cater for 10-12 guests attending week long music and/or yoga courses during the summer of 2020. The chef will need to produce lunch on each day of the course and supper on six of the seven nights. Breakfast is continental (breads, granola, yogurt, fruit platter etc). Lunches are served buffet-style and consist of salads, vegetable tarts, mezze etc with supper being a formally plated main course, cheese board and dessert. The food needs to be interesting and innovative and must be beautifully presented. In addition to breakfast, lunch and supper, the chef will need to provide morning coffee with homemade biscuits and two canapes each evening for an aperitif.

The chef will be professional at all times, well-presented and organised and comfortable working in an open-plan kitchen which will need to be kept clean and tidy.

Breakfast is served at 8,30am with lunch at 1.00pm, canapes at 6.30pm and dinner at 8pm. There will be a kitchen assistant to help with laying tables, prep and clearing. On one evening the guests will go out to eat, so the chef would be free from after lunch on that day. During free time chef is able to enjoy the facilities including a salt water swimming pool and beautiful gardens. Accommodation is provided in a private room with ensuite bathroom. Ideally, the same chef will cover all the dates, but it is possible to split the bookings between more than one chef.

Permanent, full-time cook is needed for a large, private country house near Peterborough. The candidate will have suitable experience and a knowledge and passion for food. Excellent organisational skills are essential to ensure the smooth running of the kitchen, including sourcing the best seasonal ingredients (some grown in the kitchen garden), as well as larder and freezer management. The family lives mostly in Cambridgeshire but 6-8 weeks of each year are spent at their other country houses in North Wales and South Yorkshire where the cook will usually accompany them. The core family is 2-4 people, but regular entertaining is involved in all 3 houses for up to 25 people. There are also some regular staff meals that need to be provided.

A variety of accommodation is available depending on the family circumstances of the candidate. Candidate must be a driver with a full, clean driving licence and their own car. There is access to a staff car for shopping and other work-related travel.
